Summertime means family travel and hitting the road with your brood. While I love flying the friendly skies and going to far off destinations, there’s nothing like hitting the road for a fun road trip.
My mother-in-law, daughter and I hit 55 South for weekend in soul-filled Memphis. Being as it is about 4 hours from St. Louis, it’s a perfect road trip destination. While we were in Memphis, we did partake in the southern soul food that the area is known for. I also prepared a few meals in our Extended Stay America “apartment” that helped cut down on costs while allowing me to serve home-cooked meals for my fam.

My daughter loves tacos and can eat them everyday, so of course, tacos were on the menu. Since the Extended Stay America location in Wolfchase was located by many stores and shops, we were able to get all of the ingredients and fixings to make our taco fiesta.
