2 Leeks using the white parts only
2 cups White wine
3 Tablespoons Butter unsalted butter
Mediterranean Sea Bass (2 fish, about 8 oz each)
Lemon Slices Lemon (3 per fish)
Fresh Thyme 7-8 sprigs per fish
Fresh Parsley 7-8 sprigs per fish
2 per fish Garlic Cloves
Extra Virgin Olive Oil

A little wine, fish, and veggies can help you begin a night to remember. We can assist you with helping you create a memorable experience just for the two of you.

One of the themes of Life Well Eaten as of late is getting back to basics. Going out for a night on the town and dining at amazing eateries and restaurants is something we favor. But as a chef, I want people to also know how to create five-star meals of their own in the comfort of your own home.

What’s more sexy than staying in and making your own atmosphere for love?

Branzino is just the kind of fish that is great for cooks of all types. A seasoned vet or a beginner can make it skillfully.

Following this recipe will give you an impressive meal that your loved one will talk about days after. I can tell you that it is one of my favorites.

This is the ultimate recipe to impress the one you love. If a “night in” calls for an amazing dinner, try this Branzino (Mediterranean Sea Bass) recipe.  It may sound fancy, but it is pretty simple to prepare.

Don’t be afraid of Branzino—it looks more complex than it actually is. And once you get the hang of it, it will be a staple in your romance arsenal.

Preheat oven to 450 degrees

Blanch sliced potatoes for 2 minutes (to speed up roasting process)


Remove potatoes from blanching water, drain, toss with extra virgin olive oil, salt, and pepper.

Roast for 20 min.


Remove green part of leek and thinly slice white portion.

Saute leeks with 3 tablespoons of unsalted butter for 5 minutes on medium heat

Add white wine and salt to taste, simmer for 20 min


Rinse inside of the bass making sure that all of the innards are removed and the cavity is clean.

Salt inside of the fish and stuff with fresh thyme, parsley, lemon slices, and smashed garlic cloves.

Cover exterior of fish with extra virgin olive oil and salt. Roast in 450 degree preheated oven for 15 minutes


Toss braised leeks and roasted potatoes together adjusting the seasoning.

Serve Whole roasted Branzino over potatoes and leeks.
