With corned beef you have the options of adding your favorite vegetables along with it, making it a one-dish meal that screams simplicity. Take a look below at how to make your own slow cooker corned beef and vegetables, and show your family that corned beef can be done anytime!

Let’s chat about corned beef seasoning for a moment. Almost every single corned beef sold at your local grocery will come with its own spice packet. OR, it will note on the packaging that the meat has already been seasoned. You can typically see the seasoning on the meat if this is the case.


Should your cut of meat not have a packet or be pre-seasoned, then use the seasoning mixture mentioned in the recipe below.

Corned Beef Recipe

When choosing vegetables, any stew vegetables work great. For ours we cut up one small white onion and included about 1 ½ cups of baby carrots. Feel free to add in red potatoes, celery, leeks, or other vegetables of your choosing. There is no wrong or right amount or mixture.

You will notice that corned beef is a rather pink meat, so don’t be nervous when it still has the pink hue to it. The meat will be nice and tender and fall apart quite nicely. There may be a rind of fat on the side of the brisket which can be removed prior to serving.

Serve the corned beef with your vegetables as a side dish. Feel free to pair it with rice, some bread and butter, or even a salad for the perfect meal. Fill the slow cooker with the two cups of water.

Place the corned beef into the slow cooker. Add the spice packet over the top of the corned beef.

Assemble the vegetables (all vegetables should be rinsed well and chopped if needed) around the corned beef.
