Growing up, I used to eat lamb quite frequently. Along the way, I forgot actually how good it is. Recently, I have fallen back in love with it, and have been looking for recipes that allow the richness and sweetness of the lamb meat to really come through. I came across a recipe on the Cooking Light app for Rosemary Lamb Steaks, and thought I would give it a try.

The recipe being shown in this post is a little different from the one in Cooking Light, but the basic premise is the same. Utilizing the rich taste of rosemary, you can really enjoy the lamb. It’s best made with either lamb steaks or lamb chops.

For my recipe, you start the lamb on the stove, but finish it up in the oven. That, alongside a few additional ingredients that isn’t in the Cooking Light rendition, gives these Rosemary Lamb Steaks intense flavor.


Rosemary Lamb in Skillet

For sides, you can use what’s left of the rosemary mixture to make small potatoes which are cooked and sautéed in a non-stick skillet, alongside a green vegetable like string beans or peas.

Chop Chop

Chop up the fresh rosemary, garlic, and shallots.

Mix

Mix the fresh rosemary, garlic, and shallots alongside the salt and pepper in a small bowl. Coat each lamb steak evenly.

Sear and Sizzle

Add the butter and the olive oil (yes, both) to a pan on medium to medium high heat. Then sear the lamb on both sides for an even brown color.

Finish In Oven

Once both sides are browned, put pan in the oven and bake on 400 degrees for 35-40 minutes.

Remove Rosemary Lamb from oven meat set for 2-3 minutes. Then serve.
