A common assumption surrounding salads is that they are not extraordinarily filling which can certainly be the case. While lettuce is nutritious, it is mostly composed of water, therefore even a decent serving can leave your stomach grumbling.

That’s why finding ways to incorporate vegetables into the diet while also satisfying hunger gets challenging (bring on the ranch dressing).

This Greek salad spices up the natural flavor of vegetables while also providing a filling meal.

greek saladInstead of using lettuce as a base, chickpeas are the main ingredient as well as peppers and tomatoes.

The salad also includes feta cheese, a nutritious source of dairy. The dish is coated in light lemon dressing for additional flavor, and tastes great on its own or mixed with a few servings of quinoa.

The best part is the salad is easy to make, no need to carve out more than 20 minutes of your time.

Try serving this salad at a dinner party as a side dish, or store it in the fridge for an on-the-go lunch during the week!
